The perfect Sunday Juicy and tasty Chicken roast

Pre-heat oven to 230'C

Loosen the skin on top of a full chicken carefully from the neck but don't go all the way through so it forms a little bag.

Make a butter(Important), garlic, herb, fresh lemon juice, mushrooms & red peppers (cut finely) paste and spread (about 2mm thick) it out under the loosened skin.

Stuff the chicken with some more roughly cut mushroom, red peppers.

Place in oven dish and sprinkle with some olive oil.

Place in hot oven for 20min.

Turn down oven to 190'C and cook for another 1h.

If chicken gets too brown place some foil on top to keep from burning. But it should come out perfect if your oven is 👌🏼.

You can place your veggies on the side or cook them seperately.

NB. You will eat the Whole chicken and maybe even lick the plate. ❤️🤤

I served ith with Butterfield potatoes and a warm green vegetable salad with this Salad dressing GEM (For 2 people)

5Tbs Olive oil

5Tbs lemon juice

1tsp crushes garlic

1tsp Dijon mustard

Hint of chilli

1/2tsp sugar

Salt and pepper to taste
